no matter what route you take - hire a turnkey contractor, labor wise contract etc. you have to invest a lot of your time if you want the house to be exactly what you envision it at drawing phase. I gave a full contract to my builder, but I was there for more than 6 months, every day from 8 am to at least 6 pm (including saturdays and sundays), in the end , we love the house. Everyone asked me why I spent so much time, after I am paying for a contractor and many had just completed their house or were in the same stages as mine and kept giving me examples of themselves, but after their building was completed, they had a lot to complaints on "could have been this or that", "should have done it this way " etc. but we have no issues like that except for one thing - which at the start we made an error and it was too late to go back. Despite that, our house is beautiful - if I can say so myself. That is because I was there during the finishing stages, making sure every thing went as per our plans and wishes (and there were no assumptions made by anyone else).

I believe a full contract is the way to go, because once you place a value on your time, the difference between the two options narrows considerably. However, go for a reputable contractor, after talking to previous clients.

Full contract or labor ,with or with out architect you need to invest your time in construction.If you guys understand the contract properly we are not paying any one for project management.It is always in the scope of owner.
Project management covers the following jobs
1. Schedule the project
2.Material quantification
3.Quality checks (as instructed by client /architect/to follow contract)
4.Payments schedules
5.Material co-ordination - purchasing ,delivery,shortage management etc...
Many of us by default consider all these scope in contractor or architect .There are many professional contractors and architects but they work for some price (it may be high cost to many ) so most of the home owners try to save on this part (knowingly or unknowingly).I feel its good to keep project management always with owners..
