Plumbing pressure test

As mentioned in this forum, normal practice is to do the
groove cutting and lay the pipes for plumbing before
plastering. But it is also recommended that pressure
test be done before concealing the pipes in the wall.
Does this mean that during plastering the plumbing grooves
are not plastered ?
Can pressure test be done with only partially laid
pipes in the house ?
